Baking Class

Join 了公司的Baking Class,一个人要RM150 (不是我给钱)。。由于时间关系,他们只是让我们做muffin。。
share一下resipe。。

Double Chocolate Muffin

Ingredient
125gm  Butter (non marjerin or planta)
50gm    Castor Sugar
50gm    Brown Sugar
1            Egg
1/2tsp   Vanilla Essense
125gm  Milk (non low-fat)
185gm  Plain Flour
1tbsp    Baking Powder
75gm    Dark Chocolate Chunks
75gm    Milk Chocolate Chunks


Method
1. Preheat oven to 180c
2. Cream the butter and sugar until the mixture is light and pale


add in butter

Add in castor sugar and Brown Sugar
egg ready in another small bowl.
Chef advise not to break the egg to the big bowl
3. Add the egg and vanilla essense. Continue to beat for 1 minute.

add in the egg

keep beat for a minute.
remember dont beat too long time, it might make your muffin flat
4. In another bowl sift together the plain flour and baking powder.
add flour mixture
5. Add the flour mixture and milk slowly into butter and egg mixture. Do not overmix.
add milk

6. Fold in the chopped chocolates.




7. Fill batter into paper cups and bake at 180c for 18 minutes.
fill batter to almost 3/4 cups

Dark Chocolate Chips Cookies

Ingredients
125gm    Butter
79gm      Brown Sugar
70gm      Castor Sugar
1             Egg
175gm    Plain Flour
1/4tsp     Baking Soda
175gm    Chocolate Chips
1/4tsp     Vanilla Essense


Method
1. Preheat Oven to 190 C
2. Cream together butter, brown sugar and castor sugar
3. Beat egg together with vanilla essense and mix into butter mixture
4. Mix in sifted flour followed by chocolate chips
5. Put Spoonful of batter onto baking tray

6. Bake for 10-12 minutes
7. Cool cookies on a wire rack


Chicken and Mushroom Pie

Ingredient
Cream Sauce
4 tbsp       Butter (melted)
2 tbsp       Flour
1/2 cup     Chicken Stock
1/2 cup     Whipping Cream or milk
Pinch        Salt & Pepper

Chicken Filling
4                 Button mushroom, sliced
1                 Onion, chopped & saute
2 tbsp        Carrots, cubed
2 tbsp        Corn Kernels
1 pc            Chicken breasts, poached & cubed
1/8 tbsp    Dried Thyme
1                 Hard Boiled egg (cut into 12 pieces)
Pinch         Salt & Pepper
1                 Beaten Egg for glazing
Pinch         Mixed herbs (for garnishing)
                   2 tbsp oil

2 pc frozen puff pastry
Method
1. Preheat oven to 180C
2. Heat oil and then saute onion, then add in carrots, corn kernels, mushroom and chicken.
    Cook for about 2 minutes then add in seasoning (Salt, Pepper and thyme).
    Mix all the chicken filling in a bowl (except egg).

3. Then in another bowl, mix butter and flour, next add in chicken stock and cream. Beat till smooth.
    Season with salt & pepper. Mix all the cream sauce into the chicken filling and stir well
yellow = butter + flour
white = cream
4. Spoon in the filling into a pie case, place a piece of hardboilled egg and then top it with a cut out puff pastry. Use a fork to create a mark to seal the slides.




5. Glaze with beaten egg and garnish with mix herbs.


6. Beat for 20-30 minutes until pastry becomes flaky and brown.
